Cheap and battered pots were ruining our meals. So I decided to fight fire with fire by replacing my cookware. At my house, meal time is crunch time and I can do without suppertime sabotage. I recently upgraded two of my skillets and now the whole family is reaping the benefits. The pans are so sleek and beautiful, I make an extra effort to cook healthier meals each time I use them. Even the kids are excited. They love being able to help stir food in those shiny new things. (They also tend to eat a lot more when they help cook!) In addition to the scrumptious food, it takes less time to clean up after dinner because the new pans don't normally have to soak overnight. Now that's a product worth it's salt! And here's a tip-- preserve those non stick surfaces by using wooden or plastic spoons and stirrers. Umm, I can taste the yummy stir-fry already!

Last night we made a veggie stir-fry using coconut peanut butter as a base for a stupendous peanut sauce. It was full of onion, garlic, ginger, bok choy, spinach, broccoli, carrots, mushrooms, and more. Add some tamari and a bit of rice vinegar along with some chili pepper, and it was fabulous. Add chicken or beef if desired, and serve over rice or noodles if you want (though it doesn't need anything else). Yum!

Speaking of Stir-Fry- the other day I made my fam a recipe called Authentic Fried Rice. Using a wok, I put together minced garlic, scallions, soy sauce,cane sugar,carrots, mushrooms, chicken. I added the secret ingredient being oyster sauce.. I then fried eggs while quickly stirring to add at the very end. I boiled rice and then fried everything up real quick- MUAH! Tasted very authentic- minus the preservatives! couldnt achieve this flavor without the Oyster Sauce!

A dish I love to make is Chicken Parmesan! First flatten out chicken breasts with a mallet, drench in a mixture of egg and milk, and then coat with Italian style bread crumbs. Saute chicken in olive oil, in a skillet, until it is golden brown. Then, coat a baking dish with tomato sauce, layer the chicken over top, pour more sauce over the chicken, and top with parmesan and mozzarella cheese. Bake until cheese is melted and the color golden and your mouth begins to water!

Last night to celebrate spring we decided we wanted to splurge on dinner so I decided to make a veal stroganoff. I used ground veal, onions, garlic, mushrooms, cream of mushroom soup, sour cream & beef broth and put it all on top of egg noodles. It offered a very different, but delicious taste that you don't normally get from beef & it was so very good!
